Wow. I have a new-found respect for bakeries, bakers, and people who love to bake. It’s an unbelievable art that I just do not have the patience for. But, it’s yeast bread week and we have been making french bread, sponging, portioning, scaling, proofing and more for three days straight! The result is absolutely unbelievable. There is nothing like a warm baguette, fresh from the oven. This french bread took two days to make and a tremendous amount of work. Well worth it though. AND, I have to mention my mom here because she is the reason I love to cook and she continues to amaze me with her talents. Everything she does is beautiful and delicious and beyond the best of everything. I know this sounds biased, but really it is. It makes me laugh to think how much alike we really are. If I can’t sleep, I start thinking about what I would love to cook and then I dream about cooking it. Pretty much every time I talked to mom today, she was talking about her new chef website and a new way to cook mexican street corn, and what she was cooking for dinner. I thought to myself, no wonder I dream of cooking. Mom’s made homemade chicken stock this week and has been using the chicken in different ways all week. I begged her to send me some pictures of supper tonight. She could care less about showing off her food so I’ll do it for her. Tonight mom made homemade tortilla cups with shredded chicken, sliced avocado, and homemade pico de gallo. She also made a mexican street corn that I know is out of this world! Wish I had some right about now. Bon appetite, y’all!
