I knew that little bit of caffeine in the bc powder I took was going keep me up, dang-it. Or it could have been that piece of apple pie I ate that was bigger than my head. Mrs. Weir makes a knockout apple pie that I always look forward too and usually can’t get enough of. Tonight, I brought over some fresh figs to make a dessert dish my chef shared with me. Of course they paled in comparison to that apple pie but because it was so quick and easy I thought I’d share.
Naturally, I forgot the recipe or maybe lost it but here’s my best guesstimate. I don’t think you can go wrong with butter, brown, sugar and brandy anyways.
Fig Flambé
10 figs
1/2 stick unsalted butter
1/2 cup brown sugar
2 oz brandy
Sauté sugar and butter tell combined (and caramel like) add figs, take off heat add brandy and flambé ( by bringing pan back towards heat) sauté till figs are softened serve over ice cream.
What a great last minute dessert when you have nothing but I’ve cream and fruit? Not the case tonight, but I know this recipe will come in handy.

Here’s a glimpse of a day in class, the hat is awful, my uniform’s hot, but my chef sure makes it fun.
