Want to throw a party? Having friends over for supper? How ’bout a mexican fiesta? Whether you love cooking or hate the thought of actually having to serve your friends something that came out of your kitchen, this is the perfect dish to wow your guests without a lot of extra work.
Fiesta Shrimp Fajitas
What you need:
1 LB 16-20 count shrimp, peel and deveined
for the shrimp marinade
1 lime, juiced and zest
1 T olive oil
1 bunch cilantro, chopped
1 tsp chili paste
kosher salt and cracked pepper to taste
Combine and allow shrimp thirty minutes to marinate, no more no less
For the fajita’s:
1 Red Bell pepper, thinly sliced
1 yellow pepper, thinly sliced
1 yellow onion, thinly sliced
What you do:
Heat cast iron add oil till smoking, removed shrimp from marinade and add to hot skillet, sear on each side, remove just before translucent (will continue to keep by carry over), add peppers and onion, sauté until onions & peppers are soft, add back shrimp and fresh, chopped cilantro, bring to table with warmed tortilla’s, sour cream,pico and homemade guac. One pot wonder people!
